Lombardia's sublime and home-made tuna salad is lactose-free!

Looking for lactose-free food? All the salad spreads at Lombardia, such as tuna salad, Thai Magic and Veggy Curry, are prepared lactose-free in our kitchen with a soya dressing instead of mayonnaise, cream or eggs. At Lombardia, we start from a lactose-free basis, so everyone with a lactose intolerance can enjoy our food!

Lactose-free food

Even our home-made soft ice cream is lactose-free. When inventing this lactose-free ice cream, we started from a completely different perspective. The ice cream was prepared with the following raw ingredients:

soya milk, rice milk, bourbon vanilla and agave instead of cream and cow's milk.

After testing the lactose-free recipe for a year in a soft ice cream machine, finally Lombardia's succeeded in producing its own stable ice cream in a cone. Victory was ours after much Trial and Error!

Our home-made cream is 100% vegetable-based and lactose-free.

In a lactose-free restaurant, you should be able to get a great cup of coffee too. So Lombardia developed a sensational milky coffee which is totally lactose-free! The delectable cream is perfect for everyone and is especially delightful on the Lombardia Hot Choco and the Wrong Cappuccino.

Why a lactose-free diet

If you're lactose-intolerant you have to follow a lactose-free diet

.

Lactose is a natural sugar and can be found in milk and products made with milk. Once consumed, lactose is normally split up into smaller sugars (glucose and galactose) in the small intestine by the enzyme lactase. The body can only take up these smaller sugars and convert them into energy.

If the lactase enzyme is not present, or is present at low concentrations, the lactose cannot be split up and cannot therefore be taken up by the body. The lactose then enters the large intestine where it ferments. This can result in excessive gas and acid production, a bloated feeling, flatulence and diarrhea. These are symptoms of lactose-intolerance.

A lactose-free diet will prevent this from happening.
