The first gluten-free bread I ever baked was a genuine culinary experiment. Now at Lombardia various different gluten-free breads and delicious biscuits are baked using almond flour, lentils and agave every day. We also sell a wide range of gluten-free products from Schar.
Lombardia in Antwerp is a unique gluten-free restaurant. The Belgian chef Piet Huysentruyt crowned me the Gluten-free King during one of his recordings of the Perfecte Keuken (the Perfect Kitchen) on VTM, where Piet and I regularly cook!

If you have a gluten allergy or coeliac disease, your intestines cannot tolerate gluten, and you are advised to follow a gluten-free diet.
Gluten is a protein that is present in wheat, rye, barley, oat, spelt and kamut. Gluten damages the lining of the small intestine in Coeliac patients. This can result in poor uptake of the nutrients in food which are necessary for us to be able to function properly.
Possible symptoms of gluten allergy include a bloated feeling, nausea, weight loss, chronic diarrhea and constipation. A gluten-free diet is the only remedy for a gluten allergy. After starting on a gluten-free diet the complete repair of the intestine lining takes a few months to a year. A gluten-free diet needs to be adhered to closely for the rest of your life.
